INGREDIENTS: Newk’s Pimiento Cheese  

1.5 lbs. white sharp cheddar, shredded
2.5 lbs. yellow sharp cheddar, shredded
10 oz. pimientos, peeled, drained and diced
Wet Mix

½ tbsp. Worcestershire sauce
3 cups mayo
1 small pinch salt
Spice blend of your choosing

STEPS:

Mix cheeses and pimientos together in a large bowl and combine the wet mix in another bowl. Fold the wet mix into the cheese and pimientos, stirring until combined. Refrigerate for at least 8 hours before serving. 

INGREDIENTS: Newk’s Pimiento Cheese Ball

12-16 oz. pimiento cheese
4 oz. chopped/crushed dry roasted pecans

STEPS:

Take around 4 oz. of pimiento cheese and tightly pack the mix into a ball. Then, roll the cheese ball in crushed pecans to coat the exterior. Next, add a remaining coating of pimiento cheese around the exterior of the ball and again roll the ball in the remaining crushed pecans. You can continue the process to make the cheese ball as large as desired. Serve with crackers, and enjoy!

Special Event:

Newk’s will be holding a fundraiser on August 18, 2016, from 5 p.m. – 9 p.m. for Bright Beginnings Academy for children with Dyslexia. 10% of all sales during that time will go to help Bright Beginnings Academy. Bright Beginnings is the only full day school program on the Alabama gulf coast that specializes in Dyslexia education for first through eighth grade. Bright Beginnings offers a rich and challenging curriculum for dyslexic children. Our class sizes are very small. We assess the student’s weaknesses as well as strengths to determine a starting point in all of the instructional areas. Each child is unique in their abilities and challenged accordingly.  The goal for the students is to be successful and competent learners. At Bright Beginnings, the accent is on the positive. Students find the pleasure of working with other bright and talented dyslexic kids like themselves. We encourage students to discover their talents, and develop their own learning style.
